97 • Asahi Shuzo Dassai 23 Junmai Daiginjo Sake $80/720ml.
Brilliant platinum color with a faint straw yellow cast. Creamy pistachio nougat, jicama, and ginger gum aromas follow through on a soft, silky entry to a lively, fruity-yet-dry medium body with sweet melon, and apple sauce notes. Finishes with a long, crisp and satisfying fade. Excellent vibrancy, freshness and flavorwise reminiscent of grand cru Alsatian pinot gris; pair with spicy seafood teriyaki. (tasted on Dec-11-2008)

Pale silvery straw color. Aromas of white strawberry, radish, and anise follow through on a rich, silky entry to a fruity-yet-dry medium-full body with ripe melon, apple skin, pear,and coconut cream notes. Finishes with a long, elegant fruit and spice fade. A superbly flavorful and balanced sake to pair with the finest seafood. (tasted on Dec-11-2008)

Platinum color with a faint straw cast. Spicy poached pear, anise cookie powder, and white melon aromas follow through on a soft, silky entry to a dry-yet-fruity medium body with superb balance and a delicate, elegantly fruity and lingering finish. Beautifully crafted, seamless, and stylish. (tasted on Dec-11-2008)

Pale silvery straw color. Milky rice pudding, cashew butter, and biscuit aromas follow through on a soft, silky entry to a dryish light-to-medium body with creamy nougat, baked pear pie crust, and honeyed jicama notes. Finishes with a crisp, peppery grilled pineapple accented fade. Different and fun with full appealing flavors. (tasted on Dec-11-2008)

Pale silvery straw color. Very shy aromas of apple skin, rice water, and jicama follow through on a silky, soft entry to a dry-yet-fruity light-to-medium body with apples in cream and white nougat notes. Finishes with a rich, chewy, and peppery apple and pear soufflé fade. Very nice. (tasted on Dec-11-2008)

Platinum straw color. Waxy honeycomb, dried berry, anise dust, and creamy meringue aromas follow through on a supple entry to a dryish medium body with coconut milk and tangy apple skin notes. Finishes with a nice peppery spice and creamy nougat accents. (tasted on Dec-11-2008)
