Clear with a silvery cast. Aromas of honey drizzled apple slices have a subtle spicy edge and follow through on a round, silky entry to an oily, dryish medium-to-full body with notes of nougat, shittake, and minerals. Finishes with a long, earthy umami-like fade with peppery, radish-like acidity. A seriously structured and subtly complex ginjo that is a perfect choice for maki. (tasted on Dec-03-2009)

Clear with a nickel cast. Very mild aromas of crushed apples, clay, and white nut have a hint of star anise and follow through on a soft, silky entry to a dry-yet-fruity medium body with nice roundness and lingering, lively finish. Very nice and food friendly. (tasted on Dec-03-2009)
