Clear with a faint nickel cast. Aromas of cherry pastry, bubblegum dust, and honeycomb follow through on a soft, spry entry to a fruity-yet-dry light-to-medium body with superb purity and refined depth. Finishes with a extremely long mossy river stone, melon, and powdery anise cookie accented fade. A complex and elegantly styled daiginjo sake of the highest order. (tasted on Dec-03-2009)

Clear with a platinum blue cast. Rather soft aromas display hints of anise, bamboo shoot, cashew brittle, and dusty apple skin and follow through on a soft, supple entry to a fruity-yet-dry medium-to-full body with cantaloupe and cherry notes. Finishes with a long, peppery spice and nut accented fade. A flavorful, vibrant, and intricately layered sake that will triumph at the table with a variety of cuisines. (tasted on Dec-03-2009)

Clear. Inviting, pure aromas of Asian pear, jasmine rice, and star anise follow through on a soft entry to a fruity-yet-dry light-to-medium body with subtle layers of marzipan and spice. Finishes with a long, graceful melon kissed finish. A nuanced, elegant, satisfyingly flavorful sake. (tasted on Dec-03-2009)

Clear. Aromas of banana custard and praline follow through on a supple, silky entry to a dry-yet-fruity medium-to-full body with excellent smoothness and integration of flavors. Finishes with nice interplay of spice, dried apples and bananas, toffee, and earth notes. A rich, flavorful daiginjo that will shine at the table with spicy sushi. (tasted on Dec-03-2009)

Aromas of wet rice flour, nutmeg, and custard pastry follow through on a lightly tannic, supple entry to a dry-yet-fruity medium body with baked apple and crushed nut notes.
