96 • Asahi Shuzo Junmai Daiginjo Dassai 23 Sake $90/720ml.
Clear with a pale straw cast. Ethereal aromas of melon, rain water, sweet creamy nougat, and delicate gingery spices follow through on a soft, lightly tannic entry to a dry-yet-fruity medium-full body with dried pineapple, pear custard, and praline notes. Finishes with a long, warming flourish of subtly evolving flavors and minerality. a sensational pure and evocative sake that demands attention and the finest sushi. (tasted on Jun-15-2010)
95 • Asahi Shuzo Junmai Daiginjo Dassai 39 Sake $45/720ml.
Clear with a pale straw green cast. Delicate and complex aromas of mashed banana, whipped cream, white nut, Asian pear, melon, and delicate anise follow through on a silky soft entry to a dry-yet-fruity medium-to-full body with superb purity, balance and polished depth. Finishes in a very long, mineral, jicama and cream coda with warming peppery spices. A fantastically refined and pure sake to enjoy on it's own or with the most delicate sushi. Buttery nut brittle, banana custard, leaf, and cake follow through on silky entry to a dry-yet-fruity medium-full body with great smoothness and finesse. Concludes with white plum, coconut cream, mango and delicate spice notes on the long, gently warming finish. A delicious and vibrant sake for the table. (tasted on Jun-15-2010)
91 • Miyazaki Honten 2010 Junmai-Daiginjo "Nyukon Miyanoyuki" Sake $110/720ml.
Clear with a silvery straw cast. Aromas of nuts, banana-mango bread, honeyed pear, coconut husk, and anise follow through on a soft satiny entry to a dry-yet-fruity medium-full body with superb depth, smooth texture and balance. Finishes with a very long, creamy custard and spice fade. (tasted on Jun-15-2010)
